I want to get rid of the fluorescent light fixture in my dining room. Is this easy to do? (See pic.)?

It is most likely very easy to do. You should just be able to remove the fluorescent fixture and replace it with a more traditional incandescent one. You can still enjoy the energy savings fluorescents provide with one of the screw in type of fluorescent bulbs.
